Day 4: Edible Xmas Gifts – Italian Biscotti


Say thanks to the lovelies in your life this year with a delicious edible Christmas gift. Something sweet yet elegant. And not too tricky to make… This Italian Biscotti recipe from our friends at HelloFresh is just the ticket.

Our friends over at HelloFresh are the masters of mouth-watering. They’ve gifted us this Italian Biscotti recipe to give to you! It marries sweet with savoury for delicate herby nuances, featuring whole nuts for rustic texture. Perfect for serving up alongside espresso or enjoying over a pot of tea with friends.

Like to a little variety in your life? Switch out the pistachios + hazelnuts for your nut of choice! Almonds, cashews, pecans, even those rough characters – walnuts – make the magic happen. Opt for quality ingredients – top notch vanilla and Grana Padano – for best results.


Take the kitchen by storm, Masterchefs! But be warned. These treats are moreish. Make sure you make some to keep!

You need

100g plain flour
75g caster sugar
¼ tsp baking powder
1 egg, beaten
Few drops vanilla extract or 1 vanilla bean pod, seeds removed
1 tsp fresh rosemary, chopped
25g Grana Padano, grated
25g shelled pistachio nuts
50g whole unblanched hazelnuts


The how

  1. Preheat the oven to 200°C / 180°C fan forced.
  2. Put the flour, sugar and baking powder in a large bowl. Make a well in the centre and stir in the beaten egg, vanilla, rosemary, Grana Padano cheese and nuts until you have a soft dough.

  3. Shape into a long oval and bake on a baking sheet for 20-25 minutes until the top is golden. Set aside to cool slightly.
  4. Using a serrated knife, cut it diagonally into 1cm thick slices. Arrange on the baking sheet and return to the oven for 5- 8 minutes, until the pieces are crisp and golden.
